
Turkey Vegetable Soup
Roast a chicken on 350 degrees for about 2 1/2 hours. The time will depend on how big the chicken is. Make sure the chicken reaches 170 degrees by checking it with a meat thermometer. Put olive oil and black pepper, salt, oregano and parsley on chicken and place in oven uncovered. When chicken is done, take all the meat off and use for another meal.
Place chicken bones in a large pot with enough water to cover the bones. Add the ingredients below and boil until carrots are tender.
3 cups carrots
1 cup leeks
2 cups pf grape tomatoes quartered
1 1/2 cups of fresh or frozen green peas
Fresh oregano leaves, chives and parsley (about a handful of each)
Black pepper, salt, dried oregano and parsley to taste
Once carrots are tender, take out all the chicken bones and then add a pound of ground turkey already fried in another pan.
Simmer on the stove for about an hour.
