Paleo Style Strawberry Rhubarb Crisp

          My garden is producing beautiful plentiful rhubarb plants this year.  I have made gluten free strawberry rhubarb pie and crisp for my family. Everyone has said the desserts have been delicious.  As I am serving it, my mouth is watering from the delicious aroma coming from the desserts.  I did not eat it because I do not want to negatively affect the positive progress I have made on my healing journey.  Instead I was focusing on the happiness I felt in creating and serving my children a dessert that they had requested we share during our family meals together. I do not want anyone to feel uncomfortable when eating around me because I can not eat some of the foods they enjoy. I am respectful of each persons choices to what they decide to put in their body and the dietary needs they may have.  I focus on healthy clean eating and model it through the foods I create in my kitchen. It is amazing how infectious healthy eating can be when people see the delicious creations people are sharing together in your own home.  However, just like everyone else I do look forward to a treat now and then to enjoy and feel satified.  Last night I decided it was time to create a version of strawberry rhubarb crisp that I could eat and enjoyed.  Below you will find the recipe that I created last night, ate and enjoyed.  I hope you enjoy it as much as I did.  

Serves 1

Spray a small cast iron pan with coconut oil spray. Preheat oven to 350 degrees. Time for cooking is about 25 minutes.  Keep checking for desired softness in fruit.

Add to the pan:

1/2 c strawberries
1/2 c rhubarb 
1 tsp of honey drizzled over fruit

Mix topping together in a separate bowl and sprinkle over fruit:

2 tbsp sunflower seed flour
1/2 tsp of cinnamon
2 tsp melted coconut oil 

Bake and enjoy immediately!
