Recipe: Homemade Biscuits


Homemade Biscuits

Ingredients:
1/3 c coconut flour
1/4 cup coconut oil softened
4 eggs
1 tbsp honey (optional for no sugar version)
1/8 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
                                    1/2 tsp nutmeg
                                    1 tsp pure vanilla extract

Makes 6 biscuits
Oven: 400 degrees
Cook Time:13 to 14 minutes
Line cookie sheet with parchment paper

Add all the ingredients into a bowl and beat with an electric mixer until thoroughly combined.
Scoop out with an ice cream scoop onto parchment lined cookie sheet.  Pat down and shape into a flat biscuit.  Bake for 13-14 minutes until lightly brown.

There are many ways to use these biscuits:
Let cool and enjoy with fresh fruit on top.
Spread honey or sunflower seed butter on top as a frosting.
Use 2 biscuits and make a dairy free ice cream sandwich.
Use your imagination, the possibilities are endless!  Enjoy!
